A Fuego! Is Puerto Rican slang for "that it, this is cool!" This sauce is it, and its HOT! Styled after spicy Puerto Rican style chili water. Its a popular style of hot sauce in Hawaii as well. Its is called a chili water, but no water in there. Just a blend of Jalapeños, Serrano, and Habanero peppers, garlic, salt and vinegar.
Separation is natural and a feature of the sauce. Some people like the chilis to settle to the bottom and just use the spicy vinegar and keep it topped off with more vinegar as they go. Others like to shake it up and get a good amount of peppers in the pour. It is awesome with rice dishes and gives a great pop of heat and acidity to grilled meats, veggies and salad dressings. Think Hawaiian BBQ or Puerto Rican beans, meat and rice.
